MACARONS NIGHT | A Thursday night class with Chef Fabien Huchet

MACARON NIGHT

A Thursday night class with Chef Fabien Huchet

Every last Thursday night of 2027, 18:00 to 20:00

Cr me & Croissant Baking School, 4 Drake Street, Observatory, Cape Town

R950 per person. 10 seats.

MAKE THE MACARONS YOU'VE BEEN BUYING.

Smooth tops. Proper feet. A filling that holds. The hardest little pastry in France, done properly, in one evening after work.

WHO TEACHES YOU

Chef Fabien Huchet trained at Len tre and Ferrandi in Paris, then cooked in the pastry kitchens of Le Meurice, Le Royal Monceau and Shangri-La Paris, and in Michelin-starred restaurants in Paris and London, before opening the London branch of Philippe Conticini Paris. He is Head Pastry Chef and co-founder of Cr me & Croissant, the French pastry school in Observatory, and he teaches every Macaron Night himself, at your bench.

WHAT HAPPENS IN TWO HOURS

Meringue, macaronage, piping, baking, filling. Fabien shows you why shells crack, why feet do not form, and how to read the batter before it goes in the bag. Then every step is yours. No experience needed.

WHAT YOU TAKE HOME

- A box of macarons you piped, baked and filled yourself

- A printed recipe, tested for Cape Town humidity

- A full-size product from the partner of the month, this month's Cape Town maker, presented in class by the people who make it

- Three things you will never get wrong again: the meringue, the fold, the oven

A French snack and Dilmah tea during the class. Aprons, ingredients and equipment are provided. Wear closed shoes.

Every Thursday Night in 2027, we open the lab to one Cape Town maker we believe in. Come for the macarons, leave with a new favourite.

10 SEATS, THEN IT'S CLOSED.

Macaron Night alternates with Layer Cake Night on the last Thursday of the month. When the eight seats are gone, the next Macaron Night is two months away. Book two and bring a friend.
